I am type 2 diabetic and my son is Celiac's. Removing gluten from our diet was hard, but not impossible. We use a lot of (brown) rice, and Whole Foods has several gluten free mixes for things like bread, muffins, and pizza crust that are pretty good. There are also gluten free waffles. We make pancakes using alternative flours--millet was good. There are also mixes, but they may have sugar in them. I imagine it will be a difficult adjustment, but may have the advantage of eating more whole grain carbs--just not wheat, barley, or rye.
