Among many of the spices grown in Jamaica are nutmeg, ginger, thyme, scotch bonnet peppers, which are integral distinct flavors of Jamaican cooking. The pungent thyme grows rampantly on the island and is found in the majority of Jamaican foods.

Red Snapper

Ingredients

1 pound. fillet of fresh red snapper

2 green peppers, chopped

3 cloves garlic, minced

2 tablespoons . olive oil

1 onion, chopped

1 scotch bonnet pepper(one of the hottest peppers, handle with gloves and remove seeds if you don't want it screaming hot.)

Salt and pepper to taste

Directions

Cut red snapper fillets into 1 inch cubes. In a large frying pan, combine olive oil, garlic, green pepper, and onion. Sauté for 5-8 minutes over a medium hot flame.

Add scotch bonnet into sizzling pan then add red snapper to mixture, and stir until coated well.

Sprinkle salt and pepper, cover and cook for approximately 5 minutes. Stir and cook for another 5 minutes.

Callaloo~

Ingredients

1 bunch callaloo ( or spinach).fresh, chopped

2 ounces salt pork, chopped

8 ounces coconut milk

5 cups water

1 large onion, finely chopped

3 cloves garlic, minced

8 ounces chopped okra

8 ounces crab meat

2 cloves garlic

scotch bonnet to taste

salt, pepper to taste

Directions

Place ingredients in a large stew pot except okra, crabmeat, and spices.

Simmer until the salt pork is tender then add the okra and crab meat.

Simmer for 5 minutes and season with salt, pepper, and scotch bonnet
